To start, the Orders export is enough: Shopify admin → Orders → Export → orders by date, last 6 months, CSV. Bigger stores get it by email from Shopify within a few minutes.
Better results with the Inventory export (Products → Inventory → Export) for stock on hand, and the Products export for unit costs.
